Sweet potato casserole
Ingredients/Components
- butter, softened - 1 c
- sugar - 1/2 1
- eggs - 4 item
- chopped pecans - 1 c
- butter
- all-purpose flour - 2 Tbsp
- firmly packed brown sugar - 1 c
- grated rind of 2 oranges
- juice of 2 oranges
- large sweet potatoes, cooked and peeled - 6 item
How to make sweet potato casserole:
Topping:2 Tbsp. butter1 c. firmly packed brown sugar2 Tbsp. all-purpose flour1 c. chopped pecans Beat potatoes with electric mixer until fluffy. Add butter, orange juice, rind, eggs and sugar; beat well. Spoon mixture into a 3-quart casserole. Cover with topping. Bake at 350° for 30 minutes.Topping: Combine butter, sugar and flour in a saucepan. Cook over low heat until sugar melts, stirring constantly. Add pecans. If sugar is difficult to melt, sprinkle mixture over casserole and cover to bake.
