Sweet potato cake

Ingredients/Components

• sugar - 2 c
• eggs - 5 item
• chopped pecans - 1 c
• vanilla extract - 2 tsp
• salt - 1/4 tsp
• baking powder - 1 Tbsp
• sifted cake flour
• hot water - 4 Tbsp
• salad oil
• raw sweet potatoes, grated
• nutmeg and 1 tsp - 1 tsp

How to make sweet potato cake:

Beat oil, sugar and egg yolks until smooth. Add hot water. Combine dry ingredients and sift into sugar mixture. Stir in pecans, potatoes and vanilla, continuing to blend. Beat egg whites until stiff and fold into mixture. Bake in a greased, shallow pan at 350° for about 30 minutes.
