Summer squash casserole
Ingredients/Components
- pkg - 1 oz
- sour cream - 1 c
- butter or margarine, melted - 1/2 c
- shredded carrots - 1 c
- chopped onion - 1/4 c
- can cream of chicken soup - 1 item
- sliced yellow summer squash - 6 c
How to make summer squash casserole:
Cook squash and onion in boiling water for 5 minutes. Drain. In a bowl, combine soup and sour cream. Add carrots, squash and onions. In second bowl, combine stuffing mix and butter. Spread half of the stuffing mix in bottom of a 12 x 7-inch baking dish. Spoon vegetable mixture on. Top with remaining stuffing mix.
