Ingredients/Components

  • sour cream
  • butter or margarine, melted - 1 stick
  • can cream of chicken soup - 1 item
  • large box Stove Top stuffing - 1 item
  • or 2 grated carrots for color, optional - 1 item
  • about 3 to 4 small to medium yellow summer squash - 5 c

How to make squash casserole:

Toss dry stuffing and seasonings with melted butter. Spread about 2/3 of the mix in the bottom of a 9 x 13-inch pan. Save 1/3 for the topping.

Slice squash and parboil, with carrots, about 3 minutes or until tender-crisp. Drain.

Mix squash with the soup and sour cream. Spread on top of the stuffing mix in the pan. Top with remaining stuffing mix. Bake at 350° for 45 minutes, or until golden brown and bubbly.
