Spinach rice
Ingredients/Components
- pkg - 1 oz
- salt - 1/8 tsp
- water
- ground nutmeg - 1/8 tsp
- grated Parmesan cheese - 2 Tbsp
- frozen chopped onion - 1 c
- olive oil - 1 tsp
- vegetable cooking spray - 1 item
- uncooked instant brown rice
How to make spinach rice:
Coat a large saucepan with cooking spray. Add oil. Place over high heat until hot. Add onion and saute 1 minute. Add rice, water and spinach. Bring to a boil. Cover, reduce heat and simmer 13 minutes or until liquid is absorbed and spinach is thawed, breaking spinach apart with a fork. Stir in cheese, salt and nutmeg. Yields 4 servings.
