Spicy shrimp
Ingredients/Components
- salt - 1/2 tsp
- lime juice - 1/4 c
- chopped fresh parsley - 1/4 c
- bay leaf - 1 item
- oregano - 1 tsp
- olive oil - 1 Tbsp
- cloves garlic, chopped - 2 item
- medium onions, chopped - 2 item
- leaf thyme - 1/4 tsp
- hot, cooked rice - 1 item
- medium-sized shrimp, cleaned and deveined
- can plum tomatoes in puree, broken up - 1 oz
- jalapeno pepper, seeded and cut in thin strips - 1 item
How to make spicy shrimp:
Combine lime juice, garlic and shrimp in large bowl. Refrigerate, covered, for 1 hour, stirring occasionally. Heat oil in large skillet over medium heat. Add onion, oregano, thyme and bay leaf; saute until onion is softened. Add tomatoes and jalapeno pepper and salt. Simmer until thickened, about 20 minutes. Add shrimp. Cook, covered, about 5 minutes, until shrimp are pink and curled. Stir in parsley. Serve over rice.Recipe categories: Main dish, One Dish meal, Shrimp.
