  • salt
  • water - 1 c
  • oil - 3 Tbsp
  • chopped onion - 3/4 c
  • chopped celery - 1/2 c
  • chili powder - 1 tsp
  • can stewed tomatoes - 14 oz
  • chopped green pepper - 1/2 c
  • uncooked rice - 1 c

How to make spanish rice:

Heat 2 tablespoons oil in large skillet; add rice. Brown lightly, stirring frequently. Add remaining 1 tablespoon oil, onion, green pepper and celery; cook until soft. Add remaining ingredients. Cover pan tightly. Simmer for 20 to 30 minutes.
