Sour cream potato salad
Ingredients/Components
- sugar - 4 tsp
- sour cream - 1 c
- salt - 2 tsp
- cider vinegar - 2 tsp
- dry mustard - 1/2 tsp
- medium potatoes - 6 item
- black pepper - 1/4 tsp
- hard-boiled eggs - 3 item
- small onion, minced - 1 item
How to make sour cream potato salad:
Peel potatoes; dice and cook until done. In a large mixing bowl, combine potatoes and onion. Add salt, sugar, pepper and 2 of the eggs, diced. Add vinegar and sour cream and mix together. Sprinkle in the mustard and stir again. If needed, add a bit of pickle vinegar for more moisture. Slice remaining egg and arrange over top of salad in dish from which it will be served. Fried bacon can be crumbled over the salad. Makes 6 to 8 servings.Recipe categories: Salads, Potato, Vegetables.
