Seafood newburg



Ingredients/Components
- butter or margarine - 6 Tbsp
- salt - 1 tsp
- flour - 2 Tbsp
- nutmeg - 1/8 tsp
- light cream - 2 c
- dash of paprika - 1 item
- sherry - 3 Tbsp
- cooked shrimp, lobster, crab or scallops - 3 c
- egg yolks, slightly beaten - 3 item
- bread crumbs if desired - 1 item
How to make seafood newburg:
Melt butter; stir in flour, nutmeg, paprika and salt until smooth. Stir in sherry, then seafood; cook until heated through. Combine cream and egg yolks and slowly pour into mixture; stir constantly, continuing until thick and smooth. Serve with toast points.
