- medium potatoes - 4 item
- bell pepper - 1 item
- onion - 1 item
- mushrooms, drained - 1 item
- velveeta cheese, cubed - 1 item
- Rotel - 1 item
How to make rotel potatoes:
Boil potatoes with skin on. Slice and put in a casserole dish. Saut bell pepper, onion and mushrooms.In a separate dish mix Rotel and cheese. Heat until the cheese is melted. Pour Rotel dip over potatoes.
