  • bell pepper - 1 item
  • onion - 1 item
  • mushrooms, drained - 1 item
  • velveeta cheese, cubed - 1 item
  • Rotel - 1 item

How to make rotel potatoes:

Boil potatoes with skin on. Slice and put in a casserole dish. Saut bell pepper, onion and mushrooms.

In a separate dish mix Rotel and cheese. Heat until the cheese is melted. Pour Rotel dip over potatoes.
