Pumpkin roll



Ingredients/Components
- sugar - 1 c
- cinnamon - 2 tsp
- cream cheese - 6 oz
- eggs - 3 item
- vanilla - 1/2 tsp
- salt - 1/2 tsp
- flour - 3/4 c
- nutmeg - 1/2 tsp
- baking powder - 1 tsp
- pumpkin - 2/3 c
- ginger - 1 tsp
- lemon juice - 1 tsp
- Gradually add sugar, pumpkin and lemon juice
- soft oleo - 4 Tbsp
How to make pumpkin roll:
Beat eggs on high for 3 minutes. Gradually add sugar, pumpkin and lemon juice. Stir remaining ingredients. Fold this mixture into first mixture. Pour into 18 x 10 x 1 greased and floured pan with 1 cup pecans in bottom. Bake at 375° for 15 minutes. With powdered sugar on towel, roll until cool.Filling:1 c. powdered sugar6 oz. cream cheese4 Tbsp. soft oleo1/2 tsp. vanilla Sprinkle rolled and filled roll with powdered sugar.
