  • salt - 1/2 tsp
  • flour - 3/4 c
  • butter - 4 Tbsp
  • nutmeg - 1/2 tsp
  • baking powder - 1 tsp
  • pumpkin - 2/3 c
  • powdered sugar - 1 item
  • ginger - 1 tsp
  • lemon juice - 1 tsp

How to make pumpkin cake roll:

Filling:1 c. powdered sugar2 (3 oz.) cream cheese4 Tbsp. butter1/2 tsp. vanilla Beat eggs on high speed of mixer for 5 minutes. Gradually beat in sugar. Stir in pumpkin and lemon juice. Fold dry ingredients, already sifted, into pumpkin. Spread into greased and floured 15 x 10 x 1-inch pan. Top with pecans. Bake at 375° for 15 minutes.

Turn out on a towel that has been sprinkled with powdered sugar. Starting at end of towel, roll cake and towel together; cool. Then unroll. Spread filling over cooled cake. Roll. Chill. Slice and serve.

Filling: Combine and beat until smooth.
