Potato soup



Ingredients/Components
- water
- chopped green pepper - 1/4 c
- parsley - 1/2 c
- medium potatoes - 4 item
- medium onion, chopped - 1 item
- vegie-sal - 1/4 tsp
- soy margarine - 1 Tbsp
- soy milk - 1 c
- medium zucchini, shredded - 1 item
- medium carrots, shredded - 2 item
- veggie pepper - 1/4 tsp
How to make potato soup:
Melt margarine. Add onion. Cook and stir. Peel and dice potatoes. Cook with onion 2 minutes. Add water and bring to boil. Cook 10 minutes. Remove half of potatoes and mash (blender). Add milk. Return to saucepan. Add carrots, zucchini and green pepper. Simmer. Stir in salt, pepper and parsley. Cook until all vegetables are tender.Recipe categories: Potato, Vegetables, Soups & stews.
