Pineapple nut bread
Ingredients/Components
- sugar - 3/4 c
- cinnamon - 1/2 tsp
- salt - 1 tsp
- chopped nuts - 1/2 c
- butter - 2 Tbsp
- evaporated milk - 3/4 c
- soda - 1/2 tsp
- baking powder - 4 tsp
- egg - 1 item
- sifted flour - 3 c
- lemon juice - 1 Tbsp
- small can crushed pineapple - 1 item
How to make pineapple nut bread:
Sift the flour with the baking powder, soda, salt and cinnamon. Cream the butter and sugar thoroughly in a large mixing bowl. Beat in egg. Stir in milk, lemon juice, pineapple with its syrup and nuts. Add flour mixture all at once and stir just until dry ingredients are dampened. Turn into a well-greased loaf pan. Bake in preheated 375° oven until done when tested (about 55 minutes). Let cool in pan 5 minutes, then turn out on cooling rack. Makes 1 loaf.Recipe categories: Breads, Breakfast, Quick breads.
