Ingredients/Components

  • sugar - 1/2 c
  • eggs - 2 item
  • milk - 1/2 c
  • salt - 1/2 tsp
  • almond extract - 1/4 tsp
  • baking powder - 2 tsp
  • all-purpose flour - 2 c
  • butter or margarine, softened - 1/2 c
  • diced fresh or canned peaches, patty dry - 1 c

How to make peach muffins:

Preheat oven to 375°. Grease or line 12 (2 1/2-inch) muffin pan cups. Reserve 2 tablespoons flour. In a medium bowl, combine remaining flour, baking powder and salt. Mix well. In mixer bowl cream butter and sugar, adding eggs, one at a time, beating at low speed.

Combine milk and almond extract. Add dry ingredients and milk alternately. Mix until blended. Toss peaches with 2 tablespoons of flour and gently fold into batter. Fill cups 3/4 full with batter. Bake 20 to 25 minutes until golden. Serve warm. Makes 1 dozen.
