Pasta fresca with basil
Ingredients/Components
- chopped onion - 1/3 c
- chopped fresh parsley - 1/4 c
- cloves garlic, minced - 2 item
- olive oil - 1 tsp
- freshly ground black pepper - 1 item
- part-skim Mozzarella cheese, grated - 4 oz
- chopped fresh basil or 2 tsp - 3 Tbsp
- eggless rainbow pasta - 8 oz
- tomatoes, cored and diced, or 1 28 oz
How to make pasta fresca with basil:
Cook pasta according to package directions, omitting salt. While cooking pasta, prepare sauce. Heat the olive oil in a large saucepan. Saute onion and garlic until just tender. Add tomatoes, parsley and basil; simmer 15 to 20 minutes. Drain pasta. Mix with tomato sauce and cheese. Toss until cheese is melted. Sprinkle generously with freshly ground pepper.
