Overnight fruit salad
Ingredients/Components
- sugar - 1 c
- flour - 3 Tbsp
- eggs, beaten - 2 item
- small marshmallows - 2 c
- shredded coconut - 6 oz
- prepared mustard - 2 Tbsp
- juice of 1 lemon
- can fruit cocktail, drained - 1 item
- grated mild Cheddar cheese - 8 oz
- can pineapple juice reserved - 1 item
- large Delicious apples - 4 item
How to make overnight fruit salad:
To Make Dressing: Mix eggs, sugar, flour, lemon juice and juice reserved from drained pineapple in a saucepan. Cook over medium-low, stirring constantly, until thickened. Cool and add mustard to dressing mixture.Peel, core and cut apples into bite-size pieces. Combine apples with pineapple chunks, fruit cocktail and marshmallows. Pour dressing over fruit and mix well. Sprinkle coconut over top, followed by a layer of cheese. Refrigerate 8 hours or more before serving. Keeps for several days in refrigerator.
