Oven-roasted vegetables



Ingredients/Components
- cloves garlic, finely chopped - 2 item
- Salt and Pepper to taste - 1 item
- chopped fresh oregano or 1 tsp - 1 Tbsp
- assorted cut-up fresh vegetables* - 1-1/2 lb
How to make oven-roasted vegetables:
Preheat oven to 450°. In bottom of broiler pan, without rack, combine all ingredients. Roast 20 minutes or until vegetables are tender, stirring once.Use any combination of the following: zucchini, red, green or yellow bell peppers, Spanish or red onions, white or portobello mushrooms and carrots. Serves 4.
