Ingredients/Components

  • cloves garlic, finely chopped - 2 item
  • Salt and Pepper to taste - 1 item
  • chopped fresh oregano or 1 tsp - 1 Tbsp
  • assorted cut-up fresh vegetables* - 1-1/2 lb

How to make oven-roasted vegetables:

Preheat oven to 450°. In bottom of broiler pan, without rack, combine all ingredients. Roast 20 minutes or until vegetables are tender, stirring once.

Use any combination of the following: zucchini, red, green or yellow bell peppers, Spanish or red onions, white or portobello mushrooms and carrots. Serves 4.
