Ingredients/Components

  • salt - 1 item
  • cooking oil - 2 Tbsp
  • pepper - 1 item
  • bell pepper - 1 item
  • large chopped onion - 1 item
  • shrimp, peeled and deveined - 2 lb
  • okra, cut into 1/2-inch pieces
  • chicken wingettes - 2 lb
  • large cans whole kernel corn - 2 item
  • large cans stewed tomatoes, chopped - 2 item
  • smoked sausage, cut in 1/4 to 1/2-inch pieces - 2 lb
  • crab pieces - 2 lb

How to make okra gumbo:

In a wide, deep skillet, heat oil. Spread okra out in skillet and brown on both sides. (Turn carefully. Do not stir okra.) Add onion and bell pepper and simmer until onion is no longer crisp. Add shrimp, corn and tomatoes and continue to cook on low heat until shrimp is tender. Salt and pepper to taste.

In another large, deep pot, combine the chicken, sausage and crab pieces. Add about 6 cups of water. (Water should be about 3 to 4 inches above ingredients). Allow to cook until tender. Salt and pepper to taste. Stir in okra mixture and cook approximately 5 minutes longer. Serve over rice.
