Ingredients/Components
- cinnamon - 1 tsp
- vanilla - 1 tsp
- chopped pecans - 1/2 c
- salt - 1/2 tsp
- flour
- stick margarine - 1 item
- brown sugar - 1 c
- evaporated milk - 5 Tbsp
- coconut - 1 c
- baking soda - 1 tsp
- melted butter - 6 Tbsp
- boiling water
- white sugar - 1 c
- beaten eggs - 2 item
- quick cooking oats - 1 c
- Add margarine, brown and white sugars and mix well
How to make oatmeal cake:
Pour boiling water over oats, let stand 20 minutes. Add margarine, brown and white sugars and mix well. Add beaten eggs and vanilla. Add dry ingredients to mixture. Place in greased and floured 13 x 9-inch pan. Bake at 350° for 30 minutes.Topping:1/2 c. plus 2 Tbsp. brown sugar6 Tbsp. melted butter5 Tbsp. evaporated milk1 tsp. vanilla1/2 c. chopped pecans1 c. coconut Combine all ingredients and stir over low heat until blended.
