Ingredients/Components
- sugar - 2 c
- eggs - 2 item
- salt - 1 tsp
- flour - 4 c
- baking soda - 2 tsp
- powdered sugar - 1 item
- soft butter - 1 c
- nuts, chopped - 1 c
- ground cloves - 1 tsp
- applesauce - 2 c
- ground cinnamon - 3 tsp
- ground allspice - 2 tsp
How to make mississippi spice muffins:
Cream butter and sugar. Add eggs, one at a time. Mix in applesauce and spices. Sift together salt, baking soda and flour. Add to applesauce mixture and beat well. Stir in nuts. Bake in greased mini muffin pans at 350° for 8 to 10 minutes. Sprinkle with powdered sugar, if desired. Batter will keep indefinitely in refrigerator.
