Ingredients/Components
- cocktail rye bread - 1 pkg
- can sauerkraut, drained - 16 oz
- corned beef from deli - 1 lb
- bottle Thousand Island dressing will use a little over 1/2 the bottle - 16 oz
- Swiss cheese, cut into squares - 1/3 lb
How to make mini reubens:
Mix corned beef, sauerkraut and approximately 1/2 bottle of dressing. Line a cookie sheet with the cocktail rye bread. Add a tablespoonful of beef mixture to tops of bread. Top with a square of Swiss cheese. Bake at 325° until cheese is melted.Can freeze on cookie sheet but do not add cheese until ready to bake. Place frozen bread in Ziploc freezer bags until ready to use. No need to thaw, just add cheese and place in hot oven to bake.
