Ingredients/Components
- vanilla
- chopped pecans - 3/4 c
- pkg - 1 oz
- packed brown sugar - 3/4 c
- all-purpose flour - 1 c
- oleo, softened - 1/2 c
- dash of salt - 1 item
- oleo - 1 Tbsp
- beaten egg - 1 item
How to make mini pecan pies:
Blend cream cheese and the 1/2 cup of oleo. Stir in flour. Chill for 1 hour. Shape dough into 24 (1-inch) balls. Place in small muffin pans. Press dough over bottom and grip sides of pans.In a small bowl, beat together the egg, brown sugar, 1 tablespoon of oleo, vanilla and salt just until smooth. Divide the pecans among the pastry shells. Spoon 1/2 tablespoon of egg mixture over pecans in each shell. Bake at 325° for 25 to 30 minutes. Remove from pans. Makes 2 dozen.
