  • eggs - 3 item
  • flour - 1/2 c
  • cornmeal
  • Wesson oil - 1/2 c
  • can Mexicorn - 1 item
  • grated cheese Cheddar
  • jalapeno pepper, chopped fine - 1 item
  • large grated onion - 1 item

How to make mexican cornbread:

Mix all ingredients together until of semi-smooth consistency. Pour into a greased cast-iron skillet. Bake at 375° about 25 to 30 minutes. Top should be golden brown and edges slightly darker.
