  • oil - 1/2 c
  • grated cheese
  • corn meal
  • jalapeno pepper, chopped fine - 1 item
  • large grated onion - 1 item
  • small can Mexicorn - 1 item
  • large green pepper, diced fine - 1 item
  • jar pimento pieces - 1/2 item

How to make mexican cornbread:

Mix corn meal and flour. Whisk eggs. Add all other ingredients to cornmeal mixture and mix until wet. Pour into a greased cast-iron skillet; bake at 375° for 30 to 35 minutes or until golden brown on top.
