Ingredients/Components
- milk - 2 c
- salt - 1 tsp
- eggs, beaten - 2 item
- baking powder - 1 tsp
- onion - 2 Tbsp
- strips bacon - 5 item
- yellow corn meal - 1 c
- Cheddar cheese
- can creamed corn - 1 oz
- chopped green chiles - 1/4 c
- pinch of garlic powder - 1 item
How to make mexican corn pudding:
Cook bacon until crisp. Crumble and set aside. Reserve 5 tablespoons drippings. Except bacon and Cheddar cheese, mix all other ingredients in large bowl. Mix in bacon drippings. Pour into well-greased 3-quart casserole. Sprinkle bacon and cheese on top. Bake at 350° for 1 hour or when knife comes out clean.Recipe categories: Vegan, Side dish, Mexican.
