  • sugar - 2 Tbsp
  • salt - 1 tsp
  • flour - 1/3 c
  • buttermilk - 1 c
  • eggs, beaten - 2 item
  • baking powder - 2 tsp
  • baking soda - 1/2 tsp
  • vegetable oil - 1/2 c
  • shredded Cheddar cheese - 1/2 c
  • onion, chopped - 1/3 c
  • green pepper, chopped - 2 Tbsp
  • yellow corn meal - 1 c
  • can creamed corn - 1 3/4
  • hot banana peppers, chopped - 2 Tbsp

How to make mexican corn bread:

In a mixing bowl, combine corn meal, flour, sugar, salt, baking powder and baking soda. In a second bowl, combine remaining ingredients. Add to dry ingredients and stir only enough to moisten. Pour into greased 9-inch square baking pan. Bake in a preheated 350° oven for 30 to 35 minutes or until golden brown and tests done.
