Mediterranean salad
Ingredients/Components
- sugar - 1/2 tsp
- salt - 1/4 tsp
- butter - 1 tsp
- lemon juice
- white vinegar - 1 Tbsp
- ground coriander - 1/4 tsp
- Feta cheese, crumbled - 2 oz
- broken walnut meats - 1/2 c
- olive oil or other oil
- seedless green or red grapes - 2 c
- broken romaine or lettuce leaves - 4 c
How to make mediterranean salad:
Dressing:1/4 c. olive oil or other oil1 1/2 Tbsp. lemon juice1 Tbsp. white vinegar1/2 tsp. sugar1/4 tsp. salt1/4 tsp. ground coriander Dressing: In small jar, blend the ingredients; set aside.Put walnuts in small saucepan. Cover with water. Bring to a boil; simmer for 5 minutes. (This process takes out the bitter flavor.) Put nuts in small skillet with the butter. Saute, stirring, over low heat until nuts are lightly toasted. Cool. Put lettuce, cheese, grapes and walnuts in salad bowl. Add dressing; toss well. Serve at once.
Good served with any meat, chicken or fish; especially good with roast turkey or duck.
