Mediterranean pasta salad



Ingredients/Components
- salt - 1/2 tsp
- red wine vinegar - 3 Tbsp
- Parmesan cheese - 2 Tbsp
- chopped green onions - 1/4 c
- olive oil - 2/3 c
- fresh basil - 2 Tbsp
- black pepper - 1/4 tsp
- rotelle pasta, freshly cooked and drained - 12 oz
- each: small red, green and yellow bell peppers, halved lengthwise and cut in thin strips - 1 item
- medium tomato, cut in wedges - 1 item
- ripe black olives - 1/4 c
- cubed Feta or Mozzarella cheese - 8 oz
- dried oregano - 1/4 tsp
How to make mediterranean pasta salad:
Process oil, vinegar, basil, green onions, Parmesan cheese, salt and pepper in blender until smooth. Put pasta, bell pepper strips, tomato wedges and olives in large bowl. Pour in dressing; toss to mix. Roll cheese cubes in remaining 2 tablespoons basil to coat. Add to salad; sprinkle with oregano. Toss lightly. Serve at room temperature.
