Mediterranean chicken stew
Ingredients/Components
- oil - 1 Tbsp
- minced garlic - 1 tsp
- sliced mushrooms - 4 oz
- onion, sliced - 1 item
- chicken stock - 8 oz
- apple juice - 5 oz
- sliced black olives - 4 oz
- jar sun-dried tomatoes in oil - 1 oz
- fresh rosemary - 1 item
- boneless chicken breasts, cooked and cubed - 4 item
- curried fruit chutney - 2 3
How to make mediterranean chicken stew:
Soften onion in oil. Stir in garlic, mushrooms, roughly chopped tomatoes, olives, stock, juice, chutney, rosemary and bring to a boil. Simmer a few minutes. Add chicken and simmer again until chicken is thoroughly heated. Add more stock, if necessary. Serve with pasta, rice or couscous.Recipe categories: Main dish, One Dish meal, Stew.
