Meatball stew
Ingredients/Components
- salt - 1 tsp
- oil - 2 Tbsp
- egg, beaten - 1 item
- soft bread crumbs - 1 c
- minced fresh parsley - 1/4 c
- ground beef
- finely chopped onion - 1/4 c
- thyme - 1/2 tsp
- cans beef broth - 2 1/2
- margoram - 1 tsp
- cans condensed mushroom or cream of celery soup - 2 item
- medium potatoes; peeled and quartered - 4 item
- medium carrots; cut into chunks - 4 item
- jar whole pearl onions; drained
How to make meatball stew:
In a bowl, combine first 6 ingredients. Add beef and mix well. Shape into 48 meatballs. In a dutch oven; brown meatballs in oil; drain. Add broth, soup potatoes, carrots and pearl onions; bring to a boil. Reduce heat; simmer for 30 minutes or until vegetables are tender. Sprinkle with parsley.
