Low-fat potato salad
Ingredients/Components
- salt - 1 tsp
- pepper - 1/2 tsp
- skim milk - 1/2 c
- chopped onion - 1/2 c
- celery seed - 1 tsp
- celery, diced - 1 c
- small green pepper, diced - 1 item
- yellow mustard - 2 Tbsp
- small cucumber, diced - 1 item
- sliced radish - 1/2 c
- to 6 large potatoes, cooked, cooled and cubed - 4 item
- Kraft-Free mayonnaise - 1 c
How to make low-fat potato salad:
Combine veggies in a large bowl. Mix together mayonnaise, mustard, milk, salt, pepper and celery seed. Mix until smooth. Pour over veggies and toss to coat. Chill (overnight is best.) The dressing should be a pale yellow color and slightly thin.Recipe categories: Salads, Side dish, Potato.
