Low-fat carrot cake
Ingredients/Components
- sugar - 2 c
- cinnamon - 2 tsp
- vanilla - 1 tsp
- salt - 1/4 tsp
- flour - 2 c
- grated carrots
- confectioners sugar - 1 lb
- baking powder - 2 tsp
- baking soda - 2 tsp
- applesauce - 1/2 c
- canola oil - 1/2 c
- low-fat cream cheese - 8 oz
- jar baby food carrots
- Mix well with spoon
- eggs or 8 whites or equivalent amount of egg substitute - 4 item
How to make low-fat carrot cake:
Combine sugar, oil, applesauce, eggs or egg substitute and vanilla in a large bowl. Mix well with spoon. Add flour, salt, baking soda, baking powder and cinnamon. Mix well. Add grated carrot and baby food carrots. Mix (at this time 1 cup raisins or walnuts could also be added to batter). Pour into greased and floured 13 x 9-inch cake pan. Bake at 350° for 30 to 35 minutes or until cake tests done. If desired, frost cake.Frosting:1/2 c. margarine8 oz. low-fat cream cheese1 lb. confectioners sugar1 tsp. vanilla Beat together all ingredients.Recipe categories: Desserts, Cakes, < 60 mins.
