Lite rice pudding
Ingredients/Components
- sugar - 3/4 c
- vanilla - 1 tsp
- ground cinnamon - 1 item
- skim milk - 1 qt
- stick cinnamon - 1 item
- white rice - 1 c
- zest of 1/2 lemon
How to make lite rice pudding:
In a 3-quart saucepan, add cold water to rice (enough to cover). Boil for 5 minutes. Drain rice and rinse under cool water in strainer. Return rice to saucepan and add 1 quart hot milk, lemon zest, cinnamon stick and vanilla. Simmer for 10 minutes. Add sugar. Stir and simmer for 10 more minutes.
