  • sugar - 1/2 c
  • flour - 1 c
  • flaked coconut
  • lemon juice - 3 Tbsp
  • butter or margarine, cut up - 1/2 c
  • grated lemon peel optional - 2 Tbsp

How to make lemon-coconut bars:

Topping:2 large eggs2/3 c. sugar2 Tbsp. flour3 Tbsp. lemon juice2 Tbsp. grated lemon peel (optional)1 1/2 c. flaked coconut Heat oven to 350°. Line an 8 or 9-inch square pan with foil and lightly grease foil.

Crust: Mix flour and sugar in a large bowl. Cut in butter with a pastry blender or 2 knives until mixture resembles coarse crumbs. Press evenly over bottom of prepared pan. Bake 20 to 23 minutes or until golden.

Topping: In large bowl, beat eggs, sugar, flour and lemon juice with mixer until blended. With mixer on low, add lemon peel and coconut until just blended. Pour topping over crust. Then spread evenly over crust.

Bake 25 to 30 minutes until edges are golden. Cool in pan on wire rack. Lift foil by ends to cutting board. Cut into 2 x 1-inch bars. Store finished cookies airtight up to 1 week or freeze. Makes 24 bars. Has 122 calories per bar.
