Ingredients/Components

  • sugar - 1 Tbsp
  • pepper - 1/4 tsp
  • sliced green onion - 3 Tbsp
  • frozen peas - 1 c
  • head lettuce, chopped - 1 item
  • Cheddar cheese - 3/4 c
  • hard-boiled eggs, sliced - 4 item
  • green pepper, cut into rings - 1 item
  • sliced bacon, cooked and crumbled - 1/2 lb
  • chopped radishes - 1/2 c
  • season salt - 1/2 tsp
  • ReaLemon juice - 2 tsp
  • shredded fresh carrots - 1 c
  • light salad dressing - 1 c

How to make layered vegetable salad:

Layer 1/2 head lettuce (about 4 cups) into bottom of a large salad bowl. Layer with carrots, green onion and 3 hard-boiled eggs (reserve one for garnish). Layer with remaining lettuce, bacon, peas and radishes.

In a small bowl, combine salad dressing, sugar, salt, lemon juice and pepper. Spread over last layer. Sprinkle cheese around eggs. Cover and refrigerate for 4 hours or overnight. Garnish with green pepper rings and remaining hard-boiled egg. Makes 10 servings.
