Ingredients/Components
- pkg - 1 oz
- milk - 2 Tbsp
- sour cream - 1/2 c
- raisins - 1/2 c
- chopped fresh parsley - 1/4 c
- mayonnaise
- finely chopped onion - 1/2 c
- torn lettuce - 2 c
- sweet pickle relish - 1/4 c
- small green pepper, chopped - 1 item
- cooked long grain rice - 1 c
- chopped cooked chicken, divided - 3 c
- large tomatoes, seeded and chopped - 2 item
- thinly sliced cucumber - 1 c
- small sweet red pepper, chopped - 1 item
- Dressing - 1 item
- red pepper rings - 1 item
- each: celery seeds, dill seeds, dry mustard and garlic salt - 1/2 tsp
How to make layered chicken salad:
Dressing:1 c. mayonnaise1/2 c. sour cream1/2 c. raisins1/2 c. finely chopped onion1/4 c. sweet pickle relish2 Tbsp. milk1/2 tsp. each: celery seeds, dill seeds, dry mustard and garlic salt Dressing: Combine all ingredients; stir well. Yields 2 3/4 cups.Layer 1 1/2 cups chicken and lettuce in a 3-quart bowl. Combine rice, peas, parsley and remaining chicken. Spoon dressing evenly over top of salad, sealing to edge of bowl. Top with red pepper rings; cover and chill 8 hours. Toss before serving.
