King ranch casserole
Ingredients/Components
- cans cream of chicken soup - 2 item
- Monterey Jack cheese, grated - 1/2 lb
- small carton sour cream - 1 item
- tortillas soft - 1 pkg
- to 6 chicken breasts - 4 item
- can green chilies, chopped - 1 oz
- Longhorn cheese, grated - 1/2 lb
- can Ro-Tel tomatoes, diced - 1 item
How to make king ranch casserole:
Stew chicken until very well done. Tear into strips and mix with Ro-Tel tomatoes. Mix soup, sour cream and and green chilies. Tear tortillas into bite size pieces.Layer chicken in 9 x 13-inch baking dish, then torn tortillas, cheese and sour cream mixture. (Reserve a portion of cheese to top casserole.) Bake at 350° for 20 to 30 minutes or until bubbly. Serves 10 to 12.
