Herbed onion bisque
Ingredients/Components
- milk - 6 c
- butter - 1/4 c
- all-purpose flour - 1/4 c
- freshly ground pepper - 1/8 tsp
- chopped fresh parsley - 3/4 c
- salt or to taste - 1/2 1
- cloves garlic, minced or pressed - 2 item
- dried marjoram leaves - 2 tsp
- medium carrots, pared and sliced - 2 item
- can undiluted chicken broth - 1 3/4
- bunch green onions, trimmed - 1 item
- 3 to 4 onions, peeled* - 1 lb
- 2-inch strip lemon zest
How to make herbed onion bisque:
*You may substitute leeks for the onions. Slice the onions and green onions. Melt butter in heavy saucepan. Add onions; cook for about 5 minutes, stirring over medium high heat, until onions are soft.
