Grilled pork tenderloin and pineapple
Ingredients/Components
- vegetable oil - 2 Tbsp
- lime juice - 2 Tbsp
- dry mustard - 1/2 tsp
- orange juice - 2 Tbsp
- garlic powder - 1/4 tsp
- soy sauce - 3 Tbsp
- pork tenderloins - 2 (1
- minced fresh ginger root - 2 Tbsp
- 1/2-inch thick slices fresh pineapple - 6 item
How to make grilled pork tenderloin and pineapple:
Combine first 7 ingredients in a small bowl; stir well. Trim excess fat from tenderloins. Place tenderloins in a large, shallow dish. Pour marinade over tenderloins. Cover and marinate in refrigerator 24 hours, turning occasionally.Remove tenderloins from marinade, reserving marinade. Pour marinade into small saucepan. Cook over low heat until thoroughly heated; set marinade aside.
Insert meat thermometer into thickest part of tenderloin, making sure it does not touch fat. Grill tenderloins over medium coals 45 minutes or until meat thermometer registers 160°, turning and basting frequently with reserved marinade. Grill pineapple slices for 5 minutes or until browned on both sides. Cut pineapples in half crosswise. Slice tenderloins, and serve with pineapple. Yields 6 servings.
