German potato pancakes
Ingredients/Components
- salt - 1 tsp
- vegetable oil - 1 item
- egg - 1 item
- pepper - 1/8 tsp
- medium onion - 1/2 item
- parsley - 1 Tbsp
- plain bread crumbs - 1/4 c
- medium red potatoes - 3 item
How to make german potato pancakes:
Peel potatoes and cut into small chunks. Cut onion in half. Put onion and egg in blender. Blend on "grate" setting for 20 seconds. With blender still running drop pieces of potato into blender. Blend about 20 seconds after last piece of potato is added. Transfer mixture to a bowl. Add bread crumbs, salt, pepper and parsley. Stir.Heat oil in frying pan over medium high heat. Spoon approximately 1/8 cup mixture into pan and flatten. Fill pan with pancakes. Brown on both sides. Transfer to paper towels to drain, if desired. Serve with applesauce. Soup and tossed salad can be served with this to make a complete meal.
