Gazpacho
Gazpacho
Ingredients/Components
- salt - 2 tsp
- lemon juice - 4 Tbsp
- chopped onion - 1/2 c
- chopped celery - 2 c
- tomatoes, chopped - 2 item
- olive oil - 1/2 c
- tomato juice - 6 c
- croutons - 1 item
- cucumbers, chopped - 2 item
- Tabasco - 1/2 tsp
- cans beef broth - 2 item
- bell peppers, chopped - 2 item
- Ortega chilies, chopped - 4 item
How to make gazpacho:
Put oil, lemon juice, onion, celery, Tabasco, salt, peppers and chilies in blender or food processor. Add beef broth and process. Put tomato juice in a gallon container. Add mixture from blender and stir. Put chopped cucumber and tomatoes on top. Refrigerate. Stir before ladling into bowls. Serve with croutons on top.
