Fruited cheese log
Ingredients/Components
- pkg - 1 oz
- chopped dates - 1/3 c
- Dijon mustard - 1 Tbsp
- chopped parsley - 1/4 c
- seasoned salt - 1/2 tsp
- dry sherry - 1/3 c
- dried apricots, chopped - 1/3 c
- assorted crackers - 1 item
- shredded Muenster cheese - 2 c
- chopped whole natural almonds - 1 c
- golden raisins, chopped - 1/3 c
How to make fruited cheese log:
Spread almonds in shallow pan. Toast at 350° for 15 minutes or until lightly browned; cool. Combine dates, raisins, apricots and sherry, tossing well to combine; set aside. Blend cream cheese, Muenster cheese, mustard and salt; mix well. Stir in 1/2 cup almonds and sherry-fruit mixture. Turn out onto foil. Shape into a log; cover and chill until firm. Roll in remaining almonds and parsley before serving. Serve with assorted crackers. Makes 1 (8-inch) log.Note: To decorate in strips, cover every other section with foil strips. Sprinkle with parsley. Remove foil; sprinkle plain sections with almonds.
