Ingredients/Components
- sugar
- vanilla - 2 tsp
- salt - 1/2 tsp
- flour - 2 c
- brown sugar
- evaporated milk - 3/4 c
- eggs, beaten - 2 item
- flaked coconut - 1/2 c
- baking soda - 2 tsp
- nuts - 1/2 c
- stick margarine, melted - 1 item
- can fruit cocktail including juice - 1 oz
How to make fruit cocktail cake:
Mix 1 1/2 cups sugar with eggs. Add salt, flour and baking soda. Add 1 teaspoon vanilla and fruit cocktail. Beat until fruit cocktail is in small pieces. Put batter in 9 x 13-inch pan. Mix together brown sugar, nuts and coconut. Sprinkle over batter. Bake at 350° for 45 minutes.While cake is baking, mix together margarine, 1 teaspoon vanilla, 1 cup sugar and evaporated milk in saucepan. Bring to a rolling boil and pour on cake immediately on removal from oven.
