Ingredients/Components

  • salt - 1 item
  • flour
  • pepper - 1 item
  • instant minced onions - 3 Tbsp
  • dried basil - 1 tsp
  • sliced celery
  • can tomatoes - 1 lb
  • tarragon - 1 tsp
  • lean beef shoulder, cut into 1 1/2-inch cubes
  • can large mushrooms - 6 oz
  • bacon drippings and butter - 1 item
  • carrots, cut in 2-inch squares - 1 lb

How to make french beef casserole:

Sprinkle meat with salt, pepper and 1 1/2 tablespoons flour. Brown in 2 tablespoons butter and bacon fat. Place in big casserole. Put 3 tablespoons flour in skillet with remaining fat and add juices from tomatoes and mushrooms. Stir until thickens. Pour over meat; add drained tomatoes, cover and bake for 1 hour at 325°. Take out and add other vegetables, plus instant minced onion, tarragon and basil leaves. Re-cover and bake 1 hour at 325°. Cool; add mushrooms and refrigerate. To serve, heat oven to 350° and bake for 45 minutes.
