Enchilada casserole
Ingredients/Components
- hamburger - 2 lb
- sharp Cheddar cheese, grated - 1 lb
- small cans tomato sauce - 2 item
- dry taco seasoning - 2 pkg
- can black olives, sliced - 1 item
- small cans sliced mushrooms - 2 item
- soft flour taco shells - 1 pkg
How to make enchilada casserole:
In a large skillet, brown hamburger. Drain off fat. Add taco seasoning and tomato sauce. Mix well. Grease a 9 x 13-inch cake pan. Place a layer of taco shells in bottom of pan, cutting to fit. Spread 1/3 of the following ingredients over them: meat, olives, mushrooms and cheese. Make second and third layers, starting again with the taco shells and ending with cheese. Bake in a preheated 350° oven for 30 to 40 minutes or until meat is hot in center. Allow to stand for 5 minutes before serving. Cut into squares and serve.
