Eggplant spaghetti sauce
Ingredients/Components
- oil - 3 Tbsp
- oregano - 1 tsp
- basil - 2 tsp
- tomato juice - 1 c
- garlic clove, minced - 1 item
- onion, sliced - 1 item
- green pepper, sliced - 1 item
- plum tomatoes - 1 c
- eggplant, cut into cubes peeled or unpeeled - 1 item
How to make eggplant spaghetti sauce:
Saute eggplant in oil about 7 minutes. Add onion, garlic and pepper. Saute 3 additional minutes or until tender. Combine tomatoes, tomato juice and herbs. Add to eggplant mixture. Cover and simmer for 1/2 hour. Serve over spaghetti.Recipe categories: Mushroom, Main dish, Tomato.
