Ingredients/Components
- flour - 2 3
- butter - 1 Tbsp
- beaten egg - 1 item
- salt and pepper to taste - 1 item
- medium eggplant - 1 item
How to make eggplant fritters:
Put eggplant into cold, salted water (whole). Boil until it can be pierced with a fork. Peel, mash and season with salt, pepper and butter. Add egg and flour. Mix well. Drop by spoonfuls onto hot, greased griddle.Squash may be used in place of eggplant.
