Eggplant dressing



Ingredients/Components
- salt and pepper to taste - 1 item
- medium onion - 1 item
- ground meat - 1 lb
- fat - 2 Tbsp
- bell pepper - 1/4 item
- cooked rice - 1 c
- garlic - 1 item
- medium eggplant - 1 item
- bread or cracker crumbs - 1 item
How to make eggplant dressing:
Peel and cut up eggplant; boil in salted water until tender then drain. Cook ground meat in a skillet with fat and seasoning. Add onion, garlic, and bell pepper; mix. Add rice and eggplant and mix thoroughly. If too dry, add a little water. Place in a greased casserole dish and cover with crumbs.
