Eggplant casserole
Ingredients/Components
- eggs - 4 item
- milk
- salt - 1 tsp
- pepper - 1/2 tsp
- medium onion - 1 item
- stick margarine, melted - 1 item
- medium eggplant, peeled and sliced - 1 item
- grated sharp cheese
How to make eggplant casserole:
Cook eggplant until mushy and drain. Add all ingredients except 1/2 cup of cheese and 1/2 cup of cracker crumbs and small amount of melted margarine. Mix well, pour into baking dish. Sprinkle with reserved cheese, crumbs and margarine. Bake at 350° for 25 to 30 minutes. Yields 6 to 8 servings.Recipe categories: Side dish, Vegetables, Casseroles.
